Low Carb Swedish Meatballs
Low carb Swedish meatballs are the cozy, savory dinner you can actually keep waiting in your fridge. Tender meatballs get smothered in a rich, creamy gravy with a little tang from Dijon and a deep savory note from Worcestershire, all on a bed of garlic herb green beans. It tastes like Sunday comfort food on a busy weeknight.
The gravy gets its silky texture from cottage cheese, sour cream, and chicken broth blended together, so it’s rich without any heavy cream. Everything bakes right in the meal prep containers, and each serving has 31 grams of protein and 15 grams of net carbs. Just reheat one, and lunch is handled.

- Let the containers cool before putting the lids on so condensation doesn’t make the green beans soggy.
