Swedish Meatballs

Instructions

  • Preheat the oven to 400°F and the air fryer to 375°F.
  • Add the green beans to a lined sheet pan. Drizzle with avocado oil and season with garlic & herb seasoning, salt, and pepper.
  • Par-roast the green beans in the 400°F oven for 15 minutes.
  • Place the 40 meatballs in the air fryer and air fry at 375°F for about 4 minutes to develop flavor.
  • While the green beans and meatballs cook, add the chicken broth, cottage cheese, sour cream, Dijon mustard, Worcestershire sauce, soy sauce, cornstarch, onion powder, garlic powder, and black pepper to a blender. Blend until smooth.
  • Divide the green beans and meatballs evenly among 5 oven-safe meal prep containers.
  • Spoon the Swedish gravy evenly over the meatballs, about ½ cup per serving.
  • Return the uncovered containers to the 400°F oven and bake for 15–20 minutes.
  • Let the containers cool completely before adding the lids. Refrigerate and reheat as needed.

Notes

  • Use any meatballs you like. Turkey, beef, or homemade all work.
  • Make sure the containers are oven-safe before they go back in the oven.
  • Let the containers cool before putting the lids on so condensation doesn't make the green beans soggy.
