- In a medium skillet over medium heat, cook the bacon until crispy. While it cooks, line a plate with a paper towel.
- Transfer the bacon to the lined plate and set aside.
- Leave about 1/4 cup of bacon grease in the pan, carefully removing the rest.
- Add the onion and jalapeno to the pan. Reduce the heat to medium-low and cook, stirring often, until the onions are caramelized, 15-20 minutes.
- Stir in the garlic, brown sugar substitute, apple cider vinegar, maple syrup, chili powder, and cooked bacon.
