  1. Preheat oven to 350°F. Line a muffin pan with parchment liners.
  2. Sift the dry ingredients (first 6 items) into a mixing bowl.
  3. Blend all wet ingredients until well combined.
  4. Add wet ingredients to dry and stir until smooth — don’t over-mix.
  5. Fill liners 2/3 full with batter.
  6. Let batter rest 5-10 minutes so the almond flour absorbs moisture.
  7. Drop oven temp to 325°F, then bake 20-25 minutes until a toothpick comes out clean.
  8. Cool 5 minutes in the pan, then transfer to a wire rack.
